Sourced from prime vineyards in Naoussa, the Argyrakis Ati Red 2021 embodies the purity and finesse of PDO Xinomavro. The winemaking process is meticulous, ensuring only the finest grapes contribute to this expressive and well-structured wine.
Fermented at 18-22°C, with 20 days of maceration on the skins, the wine develops deep complexity and a distinctive character. It is aged entirely in French oak barriques (3-5 years old) for one year, followed by at least one year of bottle ageing, allowing its flavours to integrate beautifully. The wine undergoes malolactic fermentation and spends one month on fine lees, enhancing its texture and depth.
Tasting Notes
Aromatically complex, this Xinomavro PDO offers a bouquet of ripe red berries, floral hints, and subtle spice. On the palate, it reveals a silky yet structured profile, with flavours of dark cherries, plums, and earthy undertones, balanced by bright acidity and well-integrated tannins. The finish is long and refined, leaving lingering notes of spice and elegance.
Food Pairing Suggestions
This structured yet elegant wine pairs beautifully with slow-cooked lamb with rosemary and garlic, aged hard cheeses like Pecorino or Gruyère, and rich tomato-based dishes such as braised beef in tomato sauce (Kokkinisto) or aubergine parmigiana. Its vibrant acidity and depth also complement wild mushroom risotto, enhancing its earthy umami flavours.
